[_] PLANT-BASED:
A plant-based lifestyle avoids meat, dairy, eggs, gelatin and processed foods such as white flour and refined sugar. This lifestyle includes unprocessed or minimally processed vegetables, fruit, nuts and seeds, legumes, beans and whole grains. A big difference between plant based & vegan is one who follows a plant-based diet may still wear or use products that are derived from animals
[_] VEGAN:
Follows a plant-based diet, and not only eliminates animal food from diet, but also extends the elimination process across all aspects of life. A vegan doesn’t use honey or beeswax because it’s derived from insects; any household goods, toiletries or beauty products or wear any type of clothing that derives from animals, such as leather, fur or silk if any of the products are tested on or derived from animals.
[_] VEGETARIAN:
Similar to plant-based which Includes a diet of unprocessed or minimally processed vegetables, fruit, nuts and seeds, legumes, beans and whole grains. Abstains from consuming any type of meat including poultry, seafood, red meat and the flesh of any other animal. Depending on beliefs, some vegetarians also refrain from by-products of animal slaughter.
▪Lactovegetarian, lacto-ovovegetarian.A lacto-ovovegetarian diet excludes meat, poultry and fish but includes eggs and dairy products. ▪A lactovegetarian diet includes dairy products, such as milk, cheese and yogurt but excludes eggs.
- Vitamin B12 Vitamin produced by microorganisms and found in all animal products; synthetic form (cyanocobalamin or cobalamin on labels) is vegan
- Vitamin D3 Vitamin D3 (cholecalciferol) comes from fish liver oils or lanolin
- Carmine (carmine cochineal or carminic acid) Red coloring made from a ground-up insect
- Gelatin Protein from bones, cartilage, tendons, and skin of animals
- Glycerides (mono-, di-, and triglycerides) Glycerol from animal fats or plants

FOOD HACKS EVERY VEGAN SHOULD KNOW
- Use half of a mashed, ripe banana to replace one whole egg in recipes for pancakes, muffins, and quick breads.
- Replace cow’s milk with equal amounts of rice milk in puddings, smoothies, and cream soups.
- Use vegetable broths in soups, casseroles, and pilafs, instead of beef or chicken broth.

[_] PESCATARIAN:
Eats any type of fruit, vegetable, legume or grain, as well as fish. While pescatarians’ diet is a focus on that of a plant-based diet with the inclusion of fish, some pescatarians still consume dairy and eggs. Please be advised that based on this definition, most of my recipes come under the description of being identified as vegetarian, no eggs, no dairy, always plant-based, which may include honey, or veggie proteins such as sausage. Recipes are not always vegan, unless specified as such.

When creativity is tapped into, and the mind is open to expand to learning more, one becomes aware of the healthier options of foods they one is accoustomed to eating. It's surprising when we learn that eating a vegetarian lifestyle slows the aging process down. "What do you eat, what is being fed to the meat that is eaten?" Making soups the main focus of their meals and building around that can be so much fun.
A few of the fathers are following the recipes to make spaghetti squash, instead of buying the store bought noodles. Mothers have told me they are making cauliflower rice instead of buying white rice now.
FROM GENERATION TO GENERATION OUR YOUTH AND OUR SENIORS
The elderly have forgotten how to make big pots of soup. The youth are not familiar with soup as a main meal. There are opportunities to work at elderly centers to remind them how back in the day, thats all we had, and we were healthier. No diabetes, no dementia, lower risks of cancers, etc. With diabetes increasing in children our young and old can benefit from learning "How To Eat To Live" a nutritious healthy vegetarian way that is economical for families.
