Where I see people make mistakes in getting on the vegetarian path is in four areas:

▪1) Giving up meat and dairy without having knowledge of the need to alternate with healthier choices of nutritional needs can result in defiencies of:

    • Calcium: Muscle cramping and spasms, pounding heartbeat, loss of sleep, irritability, tooth decay, periodontal disease, softened bones, nervousness, back and leg cramps, brittle bones, varicose and spider veins, hemorrhoids, prolapsed conditions of organs and skin, hot flashes, hot and cold syndrome, and heart arrhythmias. Long term deficiencies: Osteoporosis, scoliosis, rickets and diseases involving the loss of calcium from the bones or the failure of growing bones to have enough calcium for strength and proper growth. Stunted growth. Also, arthritis and depression.
    • Protein: Edema, fatty liver, problems with skin, hair, & nails, loss of muscle mass, greater risk of bone fractures, stunted growth, increased severity of infections, greater appetite and calorie intake
    • Iron:  Mild: Tiredness, headache, slower running times in competitive runners, weakness, difficult menstruation, irritability, depression and sleeplessness or troubled sleep. Severe: Anemia or low red blood cell counts, constipation, mouth soreness, brittle nails, pale skin or difficulty in breathing. Cravings for: "nonfood items” such as ice, clay or starch, heart disease, impaired mental skills. Can affect school or job performance, mood and memory. Increases intestinal irritation and inflammation.

▪2) Not preparing meals at home. Being a vegetarian and eating out becomes expensive. Learning how to follow a recipe and prepare your own meals is essential to the success of transitioning.

▪3) Lacking variety and creativity. Eating the same basic meals will soon become boring. If there was variety before exploring the vegetarian path, variety will also be looked for in soups, beverages and in choices of fruits, vegetables, beans, seeds, grains, and herbs as well

▪4} Eat at home before accepting invitations to the dinner parties, celebrations, gatherings of family or friends who are not vegetarian. They may mean well, and honestly thought they have included vegetables for you, but upon your arrival to the food table, you may find their selection not appetizing or not enough. Then you are encouraged to "just this one time" slip back into eating the foods you wanted to give up the desire for eating.
